Italian Chicken Pasta Salad

This is a hearty but light salad that will give you plenty of energy
Vinaigrette (0g of protein, 2g of carbohydrate, 14g of fat):
- 1 tsp minced fresh rosemary
- 1 tsp minced garlic
- 1 tsp Dijon mustard
- 1 tsp lemon juice
- ½ tbsp red wine vinegar
- 1 tbsp 3/6/9 oil or olive oil
- 1 anchovy fillet minced (I know, but trust me you wont know its there)
- salt and pepper to taste.
In a bowl combine:
- 1 cup cooked whole wheat pasta
- 3 pieces of canned artichoke 1/4s, drained
- 2.5oz cooked chicken
- 1 tbsp sun dried tomato chopped
- 1 tsp fresh chopped Italian parsley
Pour in ¾ of vinaigrette, toss, put a couple of thin parmesan cheese slices on top and serve.
